Today has been a bit of a busy one, working from home and out at the theatre in the evening, so not an awful lot of creativity to report today. Plenty of healthy veg, though!
At lunch I made another vegetable soup – onion and garlic gently fried, then a litre of stock in which I boiled torn cabbage, broccoli florets, and discs of carrot. When they were nice and tender I put the whole lot in the blender, blitzed it smooth, and added a little salt and pepper. The result was a slightly alarming radioactive colour, but drizzled with a swirl of garlic oil and chilli oil it was pretty tasty – and got the Si seal of approval too.
Dinner was quicker still – the remaining batch of ‘garden gyoza‘ that we had yesterday, served with rice and braised cabbage. The rice was freshly cooked and hot, the cabbage and gyozas were served cold, and together it made for a delicious dish, the rounded veggie flavours of the gyozas complementing the vinegary cabbage perfectly. And when eaten cold, the gyozas are a bit firmer to bite, which is really nice. I’m just sorry that they’re all gone now!
Today I ate/drank:
- Tea with almond milk
- Fizzy squash
- Cup of hot marmite with 2tsp gravy granules
- Carrot, cabbage, and broccoli soup
- Leftover ‘garden gyoza‘ with cabbage and rice
