Day 19: Packing up the flat, and a pack-up tea

Today I’ve been working from home – but also spending all my breaks and the early evening tidying like a demon and running stuff up to the loft – because Jones is moving in tomorrow! Massively exciting – though as a result of all this activity it’s been a bit of a grab-what-you-can day in terms of eating.

Tomorrow’s going to be a busy busy day of lifting and carrying and van driving and unloading, so I’ve made us a packed lunch each that we can scoff in the van or once we’ve unloaded everything. It’s simple but full of flavour, I hope – a roll spread on one side with mango chutney, on the other with our home-made chilli jam, and in between some slices of Violife jalapeno ‘cheddar’. It’s a great combination – hot and savoury-sweet and very moreish… I should know, I tested it out on toast for lunch!

Si has been out with some mates this evening, but I’m sleeping round his tonight so that we can crack on with moving right away. I made some dinner to take round (as all Si’s kitchen stuff has been packed away!) – pasta and ‘meatballs’, exploring some more of Iceland’s ‘No Bull’ range. They do a soya ‘meatball’, a well as veg ball made of kale, peas, broccoli, and quinoa, so I bought a bag of each. Eight of each went into the oven, and in the meantime I whipped up a quick tomato sauce with onion, garlic, tinned tomatoes, chilli, and a lot of dried basil. That, plus pasta, plus the meat/vegballs, went into a tupperware and I filled another little pot with some fresh basil leaves to chop up just before serving.

It was ok! The meat and veg balls are small and they were a bit dry and not very flavoursome (being generous, it’s possible I may have had them in the oven too long?) – which was a shame as the No Bull burger was so good! – but they worked fine texture-wise in the sauce. I wouldn’t rush to have them again, but the remaining half packets will be a handy stand-by in the freezer, I’m sure.

Moving day tomorrow, wheeeeeeeeeee!

 

Today I ate/drank:

  • Tea with almond milk
  • Toast with jalapeƱo cheese, chilli jam, and mango chutney.
  • Orange squash
  • Pasta with a tomato, onion, and chilli sauce, fresh basil, No Bull meatballs and veggie balls.
  • Water
