Day eight: Begin the tagine

All hail the slow cooker!

Back in Veganuary I was eternally grateful for this beautiful little gadget, which saved me from starving when I was time-poor but needed to make lunch for the next day (being cash-poor too!).

Now, it has just earned it’s keep again – Si and I had enough time before choir rehearsal to eat dinner, but not really enough time to cook – and we didn’t want to spend money on sandwiches to eat en route. The solution? A warm and comforting aubergine tagine that simmered its way to thick sweet-savoury loveliness while I was at work.

All we had to do was chop up an onion and three cloves of garlic, and cook these very briefly with some turmeric, cumin, and cinnamon. Then into the slow cooker they went, together with a diced red pepper, courgette, and aubergine; a tin of tomatoes and a tin of chickpeas (with their liquid); and ten or so dried apricots cut in half.

This was a quick job in the morning, and then the whole lot was left on low for the entire working day. Come 5 o’clock we wolfed it down, heaped on a pillow of couscous mixed with parsley, crushed pecans, and sultanas. It was so good! Warming and soft and full of lovely flavours – and so good for you too! The only thing it was lacking was a bit of heat – I had looked in vain for harissa yesterday, and had tried to compensate with a bit of cayenne pepper, but clearly hadn’t used enough. But otherwise lovely!

The only downside to eating dinner early is that you get hungry again before the end of the day! We’re just heading back from choir now, having stopped at McDonald’s for a cheeky bag of chips. At least the rest of today’s food has been healthy…!


Today I ate/drank: 

  • Tea with cashew milk
  • Lots of water
  • Cranberries, hazelnuts, and almonds (from a Graze snack pack)
  • Piece of toast with mango chutney
  • Fizzy squash
  • A raw mushroom, a handful of peanuts, and a dried apricot (picking mid-afternoon – I didn’t have proper lunch as tea was so early)
  • Apple tea
  • Aubergine tagine with couscous
  • Medium fries
  • Coke Zero


Today’s cravings:

  • McDonald’s cheese and herb bites
  • Chicken nuggets
  • Cheese generally
