Today we did our first bit of entertaining as vegans! Much excitement and fun. My mum has come up to stay for the weekend, and my sister popped round in the evening – so it was down to me and Jones to fix them up something tasty that we could also enjoy…
Mum’s a vegetarian, so we were pretty confident that we’d be able to make something that she would enjoy… the real challenge was my omnivorous sis. So, we decided to make a vegan version of a classic dish: mushroom spaghetti bolognese.
Jones took the lead on this – as ever, it started with a sofrito, and involved about three boxes of mushrooms minced in the food processor (on grater setting), plus some big flat mushrooms cut into chunkier pieces for texture. Add tinned tomatoes, and cook the whole thing down until it goes soft and mince-like and lovely. And the secret ingredient: blended aubergine, as in our vegan pad Thai, to bind it all together and make the sauce silky.
Heaped on top of a bowl of spaghetti, sprinkled with fresh basil, and served wity home-made garlic bread, it went down a treat… you wouldn’t mistake it for the meaty version, but it was thick and savoury and really delicious. Happily we had made more than we needed, as my sister’s fiance dropped by at about 10, work-tired and starving… and he loved it too 🙂
I was in charge of dessert: avocado chocolate mousse (which I am calling Chocomole). It’s an easy recipe: 2.5 avocados, cocoa, soya cream, agave syrup, and vanilla essence, all blitzed in the food processor till smooth, then chilled in the fridge.
Unfortunately, one of the avocados wasn’t ripe enough, so the texture was a bit starchy – but the flavour was good. I’m going to have another go before the end of the month – I’m determined to get it right. It’s all about the trial and error!
