Come up to the Lab & See Whats on the Slab Pt.1

Morning Class….I said Morning Class!…that’s better…

Here we have 1tbsp of chia seeds – about to meet its fate in the mortar & pestle. I tasted one and seems quite crunchy so will have to pulverise these well or maybe sieve the resulting “egg” when it’s done?…we shall see…

Hmmm well this is quite hard – maybe because there’s too many seeds in the squashing space, would probably be better if it was done in two or three batches…or use an electric coffee grinder?…

But it’s done…and voila – 1tbsp of crushed chia! Now to add the 3 tbsp of water…

…And wait…though already as I was stirring it in it was thickening up like egg white…

So the recipe is :-

1 “egg”

125g Self Raising Flour

1 tsp sugar

150ml homemade oat “milk”

Touch of baking powder…

I put a splash of water in as it was a bit stretchy (in a good way)…but the batter was very “normal”

So dry pan cooked (they didn’t need any oil/greasing) and kept warm in the oven…

…now just add maple syrup – ah…er…didn’t you bring it? Hmmm my mistake, it was in Carly’s fridge & I got mixed up! So we ate them in unadorned…

Verdict : Beautiful! Not grainy or bitty, exactly like a “normal pancake” – the pancakes themselves had that stretch that the egg containing ones do and tasted like there was a bit of wholemeal flour used in the ingredients…. “they tasted brown” says Carly…and they lacked that chalky grinding sensation you get if you eat normal pancakes solo…

I’m chalking this down as a WIN…now what else to use this chia egg for?!…
