Culinary Penicillin you say?

Well, after a valiant and gallant attempt to stay at work all day with the plague in tow I had to admit defeat and come home to bed…serendipity struck when some afternoon meetings were cancelled and so I decided that enough was enough and took myself home…

But…I’d been thinking about this soup all day – and in lieu of enchilada leftover lunch I’d definitely need something for dinner later on…

So I grabbed a “stew pack” of veg & 2 new potatoes and after a sleep this afternoon created this 🙂

Roasted down all the veg with salt & pepper and boiled the cubes new potatoes in stock (keeping the stock for later)…

Then after about 40 years at 200 degrees the veg were soft and so into the blender they went with the stock and a pile of tarragon & rosemary…added some more water in to let it down a bit more and then back into the pan and add the potatoes for a bit of chunkiness!…

It tastes amazing – roasting anything is better than boiling and then just adding enough stock to loosen it up and all those lovely flavours remain undiluted by the boiling water!…plus bonus crispy bits of veg stuck round the edge which make for a handy snack whilst preparing!…I was toying with the idea of having some rice cakes or rye bread with it, but no…it’s totally filling as it is!…

Helpfully I’ve made enough for another 3 bowls so thats in the fridge or frozen for when time is pressing or inspiration has caught a worse cold!…

Cravings today have been soup & sleep – so that’s been 100% achieved so far…I might go the whole hog and chuck a bath bomb in my bath!…

But I am expecting the soup to work it’s magic and I shall rise Phoenix like tomorrow morning…well, we shall see!…
