Day 2 : Triple Threat!…

If there was anything to push you skipping towards 8 pints of Lager and a block of halloumi it would be the first day back post xmas and the second day of Veganuary AND it was raining!…Hehe, wasn’t as bad as it sounds, and all was relatively quiet today so it allow me chance to dream up a chickpea, lentil and red pepper curry (with LOTS of chillis : I have an evening of laundry & lifemin to do, so bereft of Carly ce soir…so carlyproofed the dinner anyway by upping the heat!)…

I’m guessing that curries and stews, especially pulse packed & with a variety of veg in would be the easy way to go for a month of this…but that’s a bit too easy I think and liable to be soul crushingly dull by Friday but it will do for today whilst I prepare some other bits to tide us through…

First up is baking some rye bread for the mornings when a banana just won’t cut it…which has turned out beautifully…I was then cranking the blender and juicer up to make a litre of oat milk : simple as, 100g oats in about a litre of warm water, leave for 30 mins and then blend…then run it through the electric juicer…et voila!…

I was just weighing it out when I realised that I have a load of almond milk left, so this endeavour will have to wait for a few days!…but I’ve done it before and it was super nice…(and much cheaper) – watch this space for a video blog 🙂

As an aside, popped into Holland & Barrett and I’m amazed how their vegan “cheese”/“meat” range has grown since this time last year – even Sainsburys have a vegan halloumi…could it be even approaching the beautifulness of the real thing? We shall see….oh yeah, and fruit is still ridiculously expensive seeing as you can buy 3 tons of chocolate for 28p…annoying!…

Anyway, my mind is full of recipes and things to try out…so think I’ll nip to the shops and see what’s what for the rest of the week – I’d much rather have an abundance of ideas than to be staring at another plate of limp salad which is when the wine starts calling!…but must check with Carly when we will be in to create dinners/lunches this week…

Oddly today’s craving is some sort of soup – like roasted root veg or something…this can only be good 🙂
